If you’re low-carb for weight loss, one bite and your goals are stalled. If you’re low-carb for health reasons one bite can mean blood sugar chaos, and for PCOS, it’s like to poking a cranky bear in the eye.

INGREDIENTS

Cheese Sauce
2 oz cream cheese Softened
1/4 cup heavy cream
1/4 cup almond milk other dairy or non-dairy milk works
1/4 cup Parmesan cheese
1 cup Shredded cheddar I used mild but you can use any sharpness
Noodles
2 bags  Shirataki noodles linguine style. Other styles work also. See notes for tips
1 tsp salt
4  cups  water
low carb keto macaroni & cheese

INSTRUCTIONS

  • Add 4 cups of water + 1 tsp salt to medium saucepan
  • Cut open noodle package and dump noodles into colander over sink to drain
  • Add drained noodles to salted water and bring to a boil. Once boiling set timer for 10 minutes
  • When 5 minutes is up start making the cheese sauce in separate small saucepan
  • In small saucepan combine heavy cream, softened cream cheese, and non dairy milk. Whisk until combined. (I soften mine on low heat with cream and milk for a few minutes to save time. The clumps eventually break up)
  • Now whisk in cheddar, and parmesan cheese till fully combined and melty. Remove from heat
  • When noodles have cooked for 10 minutes, strain and return to pan. (I cut my noodles into 1/2 inch pieces with kitchen scissors after straining to make serving and eating easier)
  • Add cheese sauce to noodles. Stir until noodles are coated with cheesy goodness
  • Enjoy!
Store leftovers in fridge up to a week
